A French classic, this ginger liqueur is acquired by a slow distillation of ginger and then blended with neutral alcohol and sugar. It has a spicy ginger flavor, and the aroma matches the scent of freshly peeled ginger root.
Joseph Cartron is a family-owned business in the Burgundy region of France reaching back as far as 1882. They traditionally craft brandies and other fruited wines but have also distilled liqueurs. They craft their spirits around particular botanical ingredients and prize the aroma--they refuse "intensive farming" for their products, which they claim tends to diminish the aromatic quality of their spirits.
