The aroma consists of pleasingly tart, toasty, baked apple smells and tightly wound aromas of wood resin, cedar and apple pastry. The palate entry is appropriately astringent; at mid-palate tastes of apple peel, pears, pepper and wood take charge. The finish is compact, refreshingly tart and clean.
