The Grapes: Corvina 70%, Rondinella 25%, Molinara 5%
The grapes are harvested by hand and placed in small crates to dry according to the traditional system. In January, they are crushed with spontaneous fermentation for 40 days.
After racking and pressing, the wine is stored in oak barrels for 24 months. It is aged in the bottle for at least 8 months before being released.
The color is deep red. The perfume is ethereal with notes of ripe fruit, maraschino with a balanced sense of toasted wood and cocoa. The taste is full, harmonic, along with great softness and balance.
Pairs very well with venison, braised red meat with blood and traditional cheeses.
