Hillrock Estate Distillery is a farm distillery with roots dating back to 1806, located in New York’s Hudson Valley approximately two hours north of New York City. Hillrock is the first company to offer solera aged bourbon beginning in October 2012, though other companies have followed suit with a handful of other solera aged bourbons currently available. Hillrock was founded by Jeffrey Baker and collaborated with the late Master Distiller Dave Pickerell (formerly of Maker’s Mark).
Finished in Oloroso Sherry Casks and aged in Hillrock's Solera, the slight cinnamon aromas are surprising along with the oaked caramel-vanilla and floral, fruit notes in the nose of this golden amber bourbon. Sweet, yet spicy full-bodied flavors are warm with maple syrup, brown sugar, molasses, toffee, roasted corn, and raisin notes on the palate are balanced by spicy notes of clove and cinnamon. The medium to long warm finish abounds with sweet caramel and butterscotch. Familiar characteristic of Oloroso sherry flavors of walnut, fig and candied fruit balance the spicy rye undertones.
"Pecan pie, butterscotch hard candies, marshmallow, and maple syrup comprise an opulent nose. Similarly rich on the palate with molasses, sweet spice, black pepper, and toasted oak which leads into a dry, yet decadent finish." 93 Points, 2018 Ultimate Spirits Challenge
