In 1868 Docteur Guyot, who helped shape modern scientif approaches to French viticulture, stated that “Limoux wines should figure among the list of good red wines”. From this same belief, Cave Anne de Joyeuse was founded in 1929 to vinify said red wines. Over time, winegrowers and consumers alike have realised the expetional quality of this terroir.
The vineyard is located at the foothills of the Pyrenees Mountains.The highest expression of a vineyard in altitude. In Limoux, more precisely in the Upper Valley, Pinot Noir finds ideal conditions for maximum expression : cool air and red clay soils rich in iron from the Cretaceous period on a base of crushed limestone. The important diurnal temperature fluctuations are perfect for the production of polyphenols and antioxidants.
The grapes are hand-picked, followed by maceration and fermentation in temperature-controlled steel tanks. The wine is then aged in large oak barrels for 6 months to preserve the delicate flavors.
