🌍 Terroir & Origins

• Crafted from 100% Assyrtiko grapes grown in the Voíla area near Sitia in eastern Crete—vineyards at ~580 m altitude, planted in limestone-rich soils, dry-farmed, and organically managed by the respected Lyrarakis estate 

🛠️ Winemaking

• Hand-harvested, with about 10 hours of skin contact before pressing. Fermented in stainless steel using indigenous yeasts to preserve the grape’s purity and mineral clarity 

• Aged briefly on lees; bottled early to retain freshness and energy

• Light yellow‑straw in the glass with green highlights 

• A vibrant nose of citrus (lemon, grapefruit), white‑fleshed fruit (peach), meadow blossoms, and an identifiable chalky, flinty note .
