Crafted in Spain’s Penedès region under the traditional method (método tradicional), Poema Brut Cava is made from age-worthy vines (minimum 20 years old). The blend features classic native grapes—40% Macabeo, 40% Xarel-lo, and 20% Parellada—hand-harvested, fermented in stages, and aged on lees for roughly 12 months to develop complexity
