While the rest of the smoked whisky world reaches for peat — a Scottish tradition measured in centuries — Balcones reached into the Texas Hill Country and found something entirely its own: sun-baked scrub oak, the gnarled native hardwood that defines the Texas landscape, used in a proprietary smoking process unlike anything practiced anywhere else in the industry. The base spirit is itself unusual: roasted blue corn, grown in New Mexico, distilled in extended-fermentation double-batch copper pot stills at Balcones' distillery in Waco, Texas. Balcones Distilling was founded in 2008 in a former welding shop in Waco, Texas, by Chip Tate — a self-taught distiller who built much of the distillery's equipment by hand and became one of the most decorated figures in the American craft spirits movement almost immediately upon opening. The distillery has since grown substantially and operates from a purpose-built facility in Waco, but its commitment to pot still distillation, non-traditional grain sourcing, and uncompromising creative ambition has never wavered.
Brimstone begins with roasted blue corn sourced from New Mexico — the same heritage grain used across the Balcones corn whisky range — which is milled, mashed, and fermented through an extended fermentation cycle that develops the characteristic youthful fruit esters and masa-like sweetness in the new-make spirit. The whisky is then distilled in Balcones' double-batch copper pot stills — the distillery's signature production method, which produces a richer, heavier spirit than column distillation and preserves the natural grain character of the blue corn base.
The defining step — and the one that makes Brimstone genuinely irreplaceable — is the smoking. Rather than peating the grain before distillation in the Scottish tradition, Balcones applies its smoke to the finished spirit itself, using sun-baked Texas scrub oak through a proprietary process whose exact mechanics remain confidential. Scrub oak is a native Texas hardwood with a distinctly different aromatic profile from peat, cherry wood, or mesquite — drier, more resinous, with a campfire and BBQ pit character that is unmistakably of the Texas landscape rather than any other. The result is then blended with meticulous care before bottling at 106 proof without chill filtration.

Nose Bold, arresting, and immediately unlike anything else in American whiskey.
