Crafted by Balcones Distilling in Waco, Texas, celebrated for bold innovation in American whisky. Their terroir-driven process is shaped by Texas’s extreme climate swings—scorching heat and icy lows.
An imaginative take on their annual Mirador release, Echoing a solar eclipse, this expression uses a dual-yeast fermentation: red wine and rosé yeast combined with their house malt whisky yeast.
Matured for 4–5 years in a mix of first-, second-, and third-fill Kentucky bourbon barrels, blending fruit, grain, and textured depth.
Bottled at 55% ABV (110–110.6 proof) to highlight boldness and finesse.
Nose: A radiant bloom of pressed flowers and clover hay, layered with mango meringue, pineapple gumdrops, almond biscotti, and vibrant honeydew rind.
Palate: A textured interplay of blush lemon custard and white-chocolate raspberry tart, softened by guava pound cake and herbal prairie sage.
Finish: Long and confident, with dried thyme, and a lingering whisper of honeyed jasmine tea.
