The Kentucky Owl name carries one of the most specific and most romantic origin stories in American bourbon. Charles Mortimer Dedman founded the original Kentucky Owl distillery in 1879 in Bardstown — producing whiskey under Prohibition-era licenses through the 1920s before the brand went dormant. Nearly a century later, his great-great-grandson Dixon Dedman revived it with a simple and immediately effective strategy: source the finest aged Kentucky bourbon available, blend it with the precision and patience that the old-world tradition demands, and bottle the results in limited quantities for an audience that understands and rewards quality above marketing. The allocated, limited release Kentucky Owl batches that Dixon assembled became among the most sought-after independent bottlings in the American whiskey market.
When Stoli Group acquired Kentucky Owl, the challenge was maintaining that quality reputation while making the brand more broadly accessible — moving from grab-'em-while-you-can limited releases into a year-round permanent expression that could reach a wider audience without sacrificing the blending philosophy that made Kentucky Owl worth seeking out in the first place. The answer was The Wiseman: a new expression built around a new master blender with the credentials to deliver on that challenge. John Rhea spent over 40 years at Four Roses — one of the most complex and most specifically crafted bourbon programs in Kentucky, whose ten distinct recipes produce the nuanced, multi-layered profiles that Rhea's own palate and expertise were specifically shaped to create and evaluate. His first release under the Kentucky Owl name was The Wiseman, introduced in 2021.
The blend of four Kentucky straight bourbons — Kentucky Owl's own 4-year wheated and high-rye expressions alongside sourced 5.5-year and 8.5-year stocks including from Bardstown Bourbon Company — is a genuinely thoughtful and specifically constructed assemblage. The wheated bourbon provides softness and approachability. The high-rye provides structure and spice. The older sourced stocks provide the deeper caramel, dried fruit, and oak integration that 8.5 years of Kentucky maturation develops. Together they produce what the San Francisco World Spirits Competition judged unanimously at Double Gold in 2022 and what Whiskey for the Ages described as "the alcohol being an interesting foundation on which other flavors build rather than something to contend with." At 90.8 proof and built for broad accessibility, The Wiseman is Kentucky Owl's most welcoming bottle — the entry point into a legacy that began in 1879.
Kentucky Owl was founded in 1879 in Bardstown, Kentucky by Charles Mortimer Dedman — one of the earliest members of the Bardstown distilling community that has since become the Bourbon Capital of the World. The brand operated through the late 19th and early 20th centuries before Prohibition brought production to a halt. Dixon Dedman, the founder's great-great-grandson, revived the brand in 2015 with a sourcing and blending philosophy built on his own palate development and his access to mature, high-quality Kentucky straight bourbon stocks that he assembled into limited batches of extraordinary quality and consistency.
Following the Stoli Group acquisition, Kentucky Owl brought in John Rhea as Master Blender — whose 40-plus years at Four Roses represents among the deepest institutional knowledge of Kentucky bourbon blending available in the industry. Four Roses' production philosophy — operating ten distinct recipes across two mash bills and five proprietary yeast strains — produces a range of bourbon characters whose nuanced differences only the most experienced palates can reliably distinguish and purposefully combine. Rhea's decades of work within that system gave him a specific and immediately applicable expertise for blending The Wiseman's four-bourbon assemblage with the precision the Kentucky Owl name demands.
The Wiseman blend draws from four sources: Kentucky Owl's own 4-year wheated bourbon, whose soft, approachable mouthfeel and gentle sweetness form the blend's most accessible foundation; Kentucky Owl's own 4-year high-rye bourbon, whose spice structure and grain complexity provide the counterpoint that keeps the wheated softness from reading as simply sweet; a sourced 5.5-year Kentucky straight bourbon that bridges the younger and older components with mid-range depth; and a sourced 8.5-year Kentucky straight bourbon — the oldest component, sourced in collaboration with Bardstown Bourbon Company, that provides the most fully developed caramel, dried fruit, and oak integration in the blend. The combination of wheated and high-rye mash bills within the same assemblage is the Wiseman's most specific and most deliberately constructed production distinction — no single mash bill bourbon at this proof and price point can deliver both the wheated softness and the high-rye spice simultaneously.

Whiskey for the Ages (Brian): "The alcohol here is more of an interesting foundation on which the other flavors build than something to contend with. Each sip is warm and dry, like dusty grain, yet it is wheaty soft. Instead of the berry aromas, I now taste dark dried fruits like currants and figs. While not at all spicy, ginger and white pepper add warmth to salted caramel over slightly bitter walnuts."
Bourbon by Proxy: "Nose: Sweet upfront with caramel and toffee. I later pick up some fruits, raisins and bananas and mild spice notes of nutmeg and rye. Taste/Palate: Buttery and sweet with a thicker mouthfeel. Traditional bourbon notes of vanilla and caramel out of the gate."
The Whiskey Wash (Talia Gragg): "Nose: Savory herbs and celery come through, with the umami quality of mushrooms. It finishes sweet and heavy with dark cherry. Palate: The palate has a light, silky texture. Toasted oak comes through in a honeyed fashion."
Bin Ends official tasting note: "Nose: Aromas of caramel and toffee with underlying notes of vanilla and oak. Palate: A well-balanced sip with flavors of caramel, vanilla, and a hint of dried fruit, complemented by subtle spice. Finish: A smooth, lingering finish with notes of oak and a touch of sweetness."
Kentucky Owl official tasting notes: "The perfect blend of 4 Kentucky straight bourbons — classic bourbon profile with caramel, toffee, oak, berry, and spice notes."
Nose Warm butternut amber — the 90.8-proof bottling and the four-bourbon blend's natural color producing a warm, inviting hue. The nose opens with the generous, accessible sweetness that John Rhea specifically designed The Wiseman to deliver as its most immediately welcoming quality. Caramel and toffee lead — the two most characteristic and most broadly appealing aromatics that well-blended Kentucky straight bourbon at this proof consistently produces. Vanilla follows alongside oak. The wheated component's softness is most apparent in the nose's rounded, gentle character — nothing sharp, nothing aggressive, everything inviting. Raisins and bananas add a slightly exotic fruit dimension. Mild spice notes of nutmeg and rye emerge from the high-rye component's contribution alongside berry notes. Savory herbs and a subtle celery-mushroom umami quality add an unexpected and genuinely interesting secondary dimension. Dark cherry adds fruit depth. The blend's layered complexity — four different bourbons, two different mash bills, three different age statements — is detectable as a breadth of aromatic interest that single-source expressions at the same proof point rarely achieve.
Palate Buttery, sweet, and silky — the wheated component's most direct palate contribution in a mouthfeel of unusual smoothness for the proof point. The entry is immediately warm and dry like dusty grain, simultaneously wheaty soft — the specific quality that Whiskey for the Ages identified as the blend's most characterful achievement. Traditional bourbon notes of vanilla and caramel arrive out of the gate with thickness and a buttery richness. Toasted oak comes through in a honeyed fashion — the 8.5-year sourced component's most direct contribution, adding depth and the slightly drying wood structure that prevents the sweetness from becoming one-dimensional. Dark dried fruits — currants and figs — build through the mid-palate alongside salted caramel. Ginger and white pepper add warmth from the high-rye component — present, warm, and providing the structural counterpoint that keeps the wheated softness honest. A subtle walnut bitterness at the mid-palate close adds the final complexity note.
Finish Smooth, lingering, and sweetly resolved. Oak and a touch of sweetness carry the close most persistently — the 8.5-year component's most enduring contribution fading gradually alongside the salted caramel and dried fruit. The finish is considerably more interesting and more sustained than the approachable 90.8-proof entry would initially suggest — the blend's architectural complexity most apparent at the close where the four different bourbon characters cycle through together before resolving into a warm, clean, and entirely satisfying conclusion.

Neat at room temperature or over a single large ice cube — the wheated softness and caramel-toffee character are most fully expressed without aggressive dilution. The 90.8 proof is the most broadly accessible in the Kentucky Owl range — genuinely enjoyable neat without requiring water or ice, while carrying full flavor presence in any cocktail format. Outstanding for any occasion that calls for a well-crafted, immediately accessible Kentucky bourbon that delivers more complexity than the proof would suggest.
