Outlaw Bourbon is a bold, sweet, and spirited Texas expression—unapologetically youthful but with character. Its all-corn mash and Texas climate produce caramel and vanilla intensity that’s vibrant, though raw edges remain. It’s a daring sip—more curiosity than refinement.
Yellow Rose Distilling, based in Houston, Texas, markets Outlaw Bourbon as a rebellious whiskey that “breaks traditional rules.” It is made from 100% Texas yellow corn and distilled in a pot still as part of the brand’s “originals” line.
The whiskey is matured in small American oak barrels, capitalizing on the steep temperature swings in Texas (15–20 °F daily changes) to accelerate barrel interaction and shape flavor.
It is bottled at 46% ABV (92 proof) in its standard version (though older versions were noted in some reviews). The distillery does not publicly emphasize an age statement, and past commentary suggests maturation may be quite young (e.g. “over six months” in small barrels).
The “Outlaw” name and marketing lean into rugged Texan spirit and micro-distillery freedom, making it a statement rather than convention.
Nose: Sweet and bold—candy corn, toffee, and caramel dominate. There are touches of floral or light honeyed notes, with background oak and a whisper of green corn.
Palate: Rich and full, cellared in small barrels. Caramel, vanilla, butterscotch, and dark honey lead. As it evolves, standout notes of toasted oak, smoke, and a somewhat astringent wood edge emerge. Some tasters also detect pine or resinous spice.
Finish: Medium to long and warm. The finish holds caramel and vanilla core notes, but the oak influence lingers—sometimes sharply. A slightly metallic or dry bitterness may appear in later sips, along with a residual echo of oak char and sweet corn.
