This bold and boundary-pushing single malt from Israel’s Milk & Honey Distillery stands out for its unique terroir-driven maturity: aged at the lowest point on earth next to the Dead Sea under extreme conditions, it delivers a dramatic fusion of warm-climate character, coastal minerality and complex wood-influence. A whisky for the adventurous and discerning.
Origins & Craftsmanship
Crafted using 100% malted barley—of which a small portion is lightly peated—the whisky is double-distilled in copper pot stills in Tel Aviv. It is part of the Apex “terroir” series, in which the barrels spend the first year of maturation in the En Gedi nature reserve along the Dead Sea under high temperatures and extraordinary evaporation (angel’s share), before being finished back near the coast. The cask-blend is wide-ranging: approximately 75% ex-bourbon plus STR (shaved, toasted, re-charred) wine barrels, ex-red wine, ex-rye, ex-Pedro Ximénez sherry and virgin oak. Non-chill-filtered, kosher-certified, and bottled at a robust ABV of approximately 55-56%.

One reviewer described it as “a salt-air whisky without tasting like salt… milk-to-semisweet chocolate and vinous notes linger throughout.”
Aroma-and-flavour notes recorded: “dried fruit, rose petals, gentle pipe smoke; sage, baking spice and dark caramel on the palate; mineral finish with a hint of hibiscus.”
Commentary emphasises the high angel’s share of the Dead Sea warehouse and the rapid maturation effect from the warm climate, making this whisky very distinctive in profile.

Nose: Vanilla pod and mocha nestle within a cigar-box aroma, peppered with hints of black tea, rose petals and a fresh coastal breeze character.
Palate: Rich and assertive; begins with warm spices (cinnamon, coriander seeds) and dark cocoa, moves into sage and herbal depth, touches of crushed white pepper and a texture sculpted by intense maturation.
Finish: Long and mineral-tinged, with lingering candied ginger, cloves, dry sea-salt air and a subtle echo of hibiscus flower.
