The Pascal Jolivet 2023 Sancerre “Sauvage” is a striking, mineral-driven Sauvignon Blanc from the eastern Loire, offering a highly expressive and elegant profile.
Color: Pale, vibrant straw.
Nose: Refined and expressive with flinty minerality, white orchard fruit (apple, pear), subtle citrus, meadow blossoms, and delicate smoke or brioche accents.
Texture & Body: Medium-bodied yet racy and taut—tension-filled with a mineral backbone and firm acidity .
Flavors: A vivid mix of crisp orchard fruit, citrus, and pronounced stony minerality, with hints of flint, light herbal tones, and persistent salinity.
Finish: Clean, lingering, mineral-laced—leaves a lasting impression .
Soils: A thoughtfully curated blend—50% limestone, 30% clay-limestone, and 20% flint—vinified parcel by parcel in temperature-controlled stainless steel.
Vinification: Gentle, gravity-fed sorting and light pressing preserve pristine fruit expression. Lees aging enhances texture without adding overt creaminess.
Serving Temp: 8–10 °C.
Pairings: Ideal with shellfish, oysters, meaty or oily fish (like turbot or sole), goat cheese, green vegetable dishes, and citrus-based or herbal dishes.
Peak Enjoyment: Drink now through 2028; some vintages may cellar gracefully up to 5 years .
The 2023 Pascal Jolivet Sancerre Sauvage is a beautifully crafted, terroir-expressive Sauvignon Blanc—crisp, mineral-rich, and elegant. Its structured palate, pure fruit, and lingering salinity evoke top-tier Burgundy whites, but at a more vivacious Loire style. A superb choice for pairing with seafood and lighter fare or savoring on its own.
"Parcel selection on 2 hectares of limestone terroirs located in the villages of Champtin and Bué-en-Sancerre. Organically grown, these old vines produce exceptional grapes and an extremely pure and concentrated juice. “Sauvage” lives up to its name, aging on fine lees (thermo-regulated stainless steel vats) for 12 months, bottled without filtration or refrigeration. This wine is immediately identifiable on tasting thanks to its great freshness, liveliness, minerality, complexity and salinity on the finish. Must be decanted to let its animal aromas develop."
