Barr Hill Gin is produced by Caledonia Spirits in Montpelier, Vermont, a craft distillery known for its terroir-driven approach and use of local ingredients. What immediately sets Barr Hill apart is its signature botanical: raw wildflower honey sourced from hives managed by the distillery’s own apiary program. This honey serves both as a botanical and a finishing element, imparting a soft, rounded sweetness and a subtle floral complexity that differentiates it from more austere gins.
The gin is distilled from a neutral grain spirit with a carefully curated botanical lineup including juniper (the core defining gin botanical), coriander, angelica root, citrus peels, and the honey itself. The honey is added at two stages—during distillation and in small measure as a finish—creating a layered profile where botanical brightness and honeyed weight coexist in harmony.
