It remains the inaugural expression in the brand's Iberian Series, a chapter built specifically around Spanish and Portuguese cask influence, described by Redbreast itself as whiskeys "suffused with the natural warmth and sweetness of the Iberian peninsula." Unique among the Redbreast family, PX Edition begins its life as triple-distilled single pot still whiskey, matured first in a combination of ex-bourbon and Oloroso sherry casks, before undergoing a final, defining stage: re-casking into Pedro Ximénez hogsheads sourced from the sun-drenched bodegas of southern Spain — Bodegas Lustau, by name.

The lovely buttery pot still whiskey that comes out of Midleton distillery is amongst the finest in the world. Layer in Pedro Ximénez sherry hogsheads for a finishing cask and you've got some of the most careful craftsmanship involved from start to finish. Butterscotch, browned butter and molasses slowly uncover a hidden underground bunker filled with dark aromas that fade into sterility. The malted portion of the mash bill shines through late in the glass with milk dud and waffle bread tones."

Tasting Profile

Nose
