Origins & Craftsmanship
Produced by Milk & Honey Distillery in Tel Aviv, the gin begins with a base of 100% malted barley, mashed and distilled in-house in copper pot stills. Botanicals—hand-sourced from the Levinsky spice market—include juniper, lemon peel, orange, chamomile, lemon verbena, cinnamon, black pepper and the native Origanum syriacum (commonly known as za’atar). After two distillations the botanicals are macerated for 48 hours, followed by a final third distillation to refine the spirit. The result is bottled at 46% ABV, non-chill-filtered and certified Kosher.
