San Fabiano’s 2009 Vin Santo is a beautifully mature expression of Tuscany’s most traditional dessert wine—layered, oxidative, and quietly complex. Origins & Craftsmanship
Produced by San Fabiano Calcinaia in the heart of Chianti Classico, this Vin Santo reflects centuries-old Tuscan winemaking tradition. The estate, known for its organic farming and terroir-driven wines, sources grapes from its hillside vineyards in Poggibonsi and Castellina.
Vin Santo is traditionally made from a blend of indigenous grapes—typically Trebbiano, Malvasia, and small amounts of Sangiovese or Canaiolo—harvested and then air-dried for several months to concentrate sugars and flavors.
The wine is then aged for extended periods in small sealed barrels known as caratelli, often in attic conditions where temperature fluctuations encourage slow oxidation and deep flavor development. This process, combined with the excellent 2009 vintage conditions, results in a wine of notable depth and longevity.
Tasting Profile
Nose: Honeyed dried fruits, fig, and apricot layered with walnut, toasted almond, and a touch of tobacco.
