DAOU Mountain sits at 2,200 feet in the Adelaida District, just 14 miles from the Pacific — high enough and close enough to the coast that warm days and genuinely cool nights create the kind of dramatic diurnal temperature swing that concentrates flavor while preserving natural acidity, all rooted in calcareous clay soils that add their own mineral complexity to the finished wine. Every grape destined for this bottling is hand-picked, then sorted using cutting-edge optical technology, fermented with proprietary native yeast cultivated directly from the DAOU estate, and made entirely from free-run juice — no press wine blended in.
