Herbsaint is a bold, aromatic anise-flavored American liqueur with the spirit and character of absinthe—but crafted in New Orleans. With its licorice-rich profile and strong herbal backbone, it offers a distinctive alternative to typical anise spirits and works superbly in classic cocktails or as a measured sipper for seasoned palettes.

Origins & Craftsmanship
Herbsaint was originally developed in New Orleans by J. Marion Legendre, inspired by his experiences with pastis and absinthe during World War I in France. After Prohibition’s end, the formulation was introduced in the 1930s as an American “absinthe substitute.” The brand eventually came under the stewardship of the Sazerac Company and is still made using the original recipe. Produced in Louisiana, the liqueur carries a bold herbal base—chiefly anise, fennel and other botanicals—giving it an intense flavour profile built for cocktails (most famously the Sazerac) but also for thoughtful sipping.

• Nose: A strong wave of anise and licorice hits immediately, followed by fresh fennel fronds, subtle mint leaf, and a hint of dry herbal under-notes like sage or basil.

• Palate: Full and direct—sweet licorice, green fennel seed, sharp star-anise, with a background of softened plant-herb bitterness. As it opens, you’ll detect a creamy mouth-feel and a slight chalky or mineral edge.

• Finish: Long and warming—anise lingers, the herbal bitterness deepens slightly, and you’ll feel a dry-licorice echo while the warmth fades to reveal a subtle spice (white pepper or star-anise nuance).
