El Jolgorio Pechuga Edition #29 is a striking and elegant mezcal that embodies ceremonial tradition and expert craftsmanship. Marrying bright agave character with layered fruit, spice, and savory complexity, it’s a mezcal built for savoring—an experience as much as a pour.
This expression comes from the team at El Jolgorio in Oaxaca, Mexico. Made with Agave Espadín, the Pechuga style is unique: during the second distillation, a range of local fruits (pineapple, orange, apple, pear, plantain) and a raw turkey breast (“pechuga” means breast) are added to the still. It’s a production rooted in celebratory ritual, typically reserved for special occasions. The agaves are cooked in traditional earthen pit ovens, milled with a tahona, fermented in open-air vats, and distilled twice in copper pot stills. Edition #29 is one of the numbered batches reflecting this artisan production.
Nose: The first impression is ripe tropical fruit—pineapple and pear—intertwined with crushed citrus peel and roasted agave. A gentle smoke drifts in, alongside savory hints of turkey broth or chicken stock, toasted nuts, and warm baking spices.
Palate: Medium to full-bodied and rich. Roasted agave leads, followed by banana-plantain sweetness, citrus zest, and orchard fruit. Mid-palate brings gentle smoke, savory turkey/roast-meat nuance, and spice (white pepper, clove). The finish delivers complexity—wood char, dry stone mineral, and a lingering peppery heat tempered by soft fruit echoes.
Finish: Long and contemplative. The fruit gradually fades into savory smoke, lightly toasted oak, and a mineral dryness. The roasted agave and spice remain in the background, inviting reflection more than rush.
