PRODUCT DESCRIPTION
Premium de Jalisco sits 7,200 feet above sea level in the Sierra del Tigre mountains near Mazamitla — the highest distillery in Mexico, and a location that changes everything about how tequila is made there. At that altitude, the cool mountain air keeps fermentation and distillation at meaningfully lower temperatures than virtually any other tequila producer in Jalisco, and brothers Octavio and Alberto Herrera have built their entire craft around adjusting every stage of production to that specific environment. Mazamitla itself is nicknamed "the Mexican Switzerland" — pine-covered hills, cobblestone streets, and cool, forested mountain air that feels genuinely out of place in the popular imagination of tequila country.
Insólito — Spanish for "uncommon" or "unusual" — arrived at Sip Tequila's broader portfolio through an unlikely partnership: the Double Grammy-nominated country band Midland teamed up with the Herrera brothers to bring their high-altitude, small-batch production to a wider audience. The name fits. Every bottle is 100% Weber Azul blue agave, sourced 80% from Highland and 20% from Lowland Jalisco terroir, with no artificial ingredients whatsoever added at any stage — no glycerin, no food coloring, no sugar-based syrups, no synthetic agave or oak extracts. Just pure, high-altitude agave spirit.
The Reposado ages between six and ten months — approximately eight months on average — in virgin American oak barrels, toasted to a specific 2.5 char that primes the wood to release exceptional flavors typically reserved for bourbon production, a genuinely unusual choice within the tequila category, where reused ex-bourbon barrels are far more common than new virgin oak. The seasonal swings at 7,200 feet drive a more active flow of spirit in and out of the barrel's wood than lower-altitude aging environments allow, deepening the extraction over a shorter timeframe. The result preserves the sweeter notes of the house Blanco while the aging brings forward almond and vanilla — cooked agave, oak, and butterscotch on the nose, with baking spice and ripe fruit joining buttery agave and dry oak tannins on the palate, closing on a lasting, slightly dry finish. Best enjoyed neat, on the rocks, or in a Paloma — a genuinely uncommon tequila from a genuinely uncommon place.
Insólito is produced at Premium de Jalisco, owned and operated by brothers Octavio and Alberto Herrera, in Mazamitla, Jalisco — a distillery sitting at 7,200 feet above sea level in the Sierra del Tigre mountains, making it the highest-altitude tequila distillery in Mexico. The elevation fundamentally shapes production: the cooler ambient temperature at this altitude changes fermentation and distillation dynamics, and the Herrera brothers' full-time staff of a dozen trained distillation experts adjust every stage of the process specifically to account for it. The brand came to the market through a partnership between the Herrera brothers and the Double Grammy-nominated country band Midland, bringing the Sierra del Tigre's uncommon production environment to a broader audience under the Sip Tequila portfolio.
Every Insólito expression is made from 100% Weber Azul (blue agave), sourced 80% from Highland Jalisco terroir and 20% from Lowland terroir, distilled entirely at the Mazamitla facility with no artificial ingredients — no glycerin, food coloring, sugar-based syrups, or synthetic agave or oak extracts added at any point. The Reposado ages between six and ten months, roughly eight months on average, in new virgin American oak barrels toasted to a specific 2.5 char level — a choice the distillery specifically credits with unlocking flavor complexity usually associated with bourbon production rather than typical reposado tequila, most of which ages in previously used barrels. The high-altitude seasonal temperature swings drive a more active exchange of spirit through the barrel wood than lower-elevation aging environments typically produce, contributing to the Reposado's layered flavor development in a comparatively short maturation window.

"Aged no more than 10 months in new American Oak Barrels, our Reposado preserves the sweeter notes of its Blanco cousin while the slight aging brings forth almond and vanilla notes."
Sip Tequila (extended tasting note):
"Aroma: Cooked agave, vanilla, oak, butterscotch, pepper. Palate: Buttery cooked agave, dry oak tannins, spicy pepper, baking spices, ripe fruits. Finish: Lasting, slightly dry."
San Francisco Tequila Shop (extended tasting note):
"The aging process imbues the tequila with a multitude of rich flavor notes, including floral and grapefruit notes and hints of cinnamon, nuts, and vanilla. The hot days and cool nights of the barrel add an extra layer of complexity, resulting in a nuanced and unforgettable spirit."
El Cerrito Liquor (extended tasting note):
"Nose: Cooked agave, vanilla, caramel, oak, floral notes, light spice. Palate: Smooth agave sweetness layered with butterscotch, honey, oak, and gentle pepper. Finish: Medium, elegant, lingering oak, vanilla, agave, and soft warming spice. Colour: Golden amber hue with bright clarity reflecting refined barrel aging process."
Nose
Golden amber with bright clarity, reflecting the refined barrel-aging process. Cooked agave leads with warm, sweet richness, joined by vanilla and caramel from the virgin American oak. Butterscotch and floral notes add roundness, with light pepper spice and a hint of grapefruit brightness threading through the background.
Palate
Buttery cooked agave carries the entry with genuine sweetness — the same sweeter character as the Blanco, but layered now with dry oak tannins and gentle pepper. Baking spices, honey, and ripe fruit build through the mid-palate, the 2.5-char virgin oak contributing a depth more commonly associated with bourbon than reposado tequila.
Finish
Lasting and slightly dry, with lingering oak, vanilla, and agave carrying the close alongside soft, warming spice. A medium, elegant finish that rewards slow sipping.
