There is a debate in Venice that visitors rarely hear about — a debate conducted quietly and seriously, as Venetians tend to conduct their most important arguments, over the question of the original Spritz. Aperol, the mass-market orange aperitivo from Padua, now dominates the Spritz category globally. But Venetians — the people who actually invented the drink, in the city where it was born, on the canals where the Austro-Hungarian soldiers once watered down their wine in the 19th century — many of them will tell you that a proper Spritz is made with Select. Not Aperol. Select.

Mario and Vittorio Pilla created Select in 1920 in Venice's Castello district, naming it as simply and as directly as confidence allows. The recipe is built on 30 botanicals, with two specifically and publicly identified: juniper berries, chosen for their balsamic and floral characteristics, which undergo a special maceration and distillation process in a traditional copper pot still that gives Select its distinctive fresh, resinous, almost gin-like structure; and rhubarb root, individually processed to provide the intensely bitter notes that balance the whole. The rest of the 30 botanicals — vanilla, cardamom, ginger root, lavender, cinnamon, and others that remain a guarded secret — add the spice, warmth, and floral complexity that make Select more interesting in a glass than a straightforward bitter profile alone could achieve.

Origins & Craftsmanship

In 1919, brothers Mario and Vittorio Pilla moved from Bologna to Venice's Castello district — a neighborhood of working boatyards, gondola workshops, and local bacari (wine bars) at the eastern edge of the city — and founded Fratelli Pilla & C., a liquor production company specifically conceived to contribute to the economic and social revitalization of post-World War I Venice. Their first spirit, Aperitivo Select, debuted in 1920 and quickly became a fixture of Venetian aperitivo life, its signature bright red color appearing across the city's canal-side bars, its presence in the evolving Venetian Spritz solidifying what would become the defining aperitivo ritual of the Veneto.

The production process is a genuine combination of techniques rarely found in a single Italian bitter: complex maceration of botanicals in spirit, boiling, and crucially, copper pot still distillation specifically applied to the juniper berries — a production step that gives Select the fresh, resinous, gin-adjacent structure that most distinguishes it from the category's simpler expressions. The 30 botanicals in the recipe are blended after their individual preparations, filtered, and then matured before bottling, a process that has remained unchanged since 1920. In 1954, Select was acquired by Distilleria Jean Buton and eventually absorbed by Gruppo Montenegro — the Bologna-based producer whose portfolio includes Amaro Montenegro — which continues production to the original recipe. In 2023, Gruppo Montenegro opened Ca' Select in Venice, returning production physically to the city of the liqueur's birth.

Nose
Brilliant deep crimson — the juniper berries' contribution to the color confirmed alongside the rhubarb and citrus. The nose opens with a herbal, slightly resinous quality — the copper pot-distilled juniper most directly apparent as the most specifically fresh and the most specifically balsamic primary aromatic. Bitter orange and citrus oil follow alongside the floral qualities of the lavender. Red fruit — strawberry and raspberry — add a specifically vivid and the most memorably surprising secondary fruit brightness. Palate
Brilliantly balanced — the most consistently confirmed and the most specifically accurate single characterization of Select's palate. The initial burst of bitterness from the rhubarb root provides a quinine-like opening edge that moves immediately into a mid-palate of spicy, tropical complexity: cardamom, ginger root, red fruits, and warm baking spices layering together. The juniper's balsamic and resinous character carries through as the most structural and the most gin-like mid-palate quality. Strawberry and raspberry add vivid red fruit richness. Vanilla adds subtle sweetness and warmth. Between Aperol's approachable sweetness and Campari's aggressive bitterness — elegantly balanced, tipping toward the sweeter side without ever losing the bitter backbone that earns its aperitivo identity.

Finish
Balsamic, floral, and citrus-tinged — the juniper and rhubarb carrying the close with harmonious bittersweet resolution. Lavender and geranium add the most persistently floral finishing quality. Orange peel lingers alongside the herbal bitterness. Softer and more accessible than Campari's finish while more botanically complex than Aperol's simpler sweet close.
