Three ingredients. That's the entire recipe behind every bottle of Copalli rum: organic heirloom sugar cane, rainwater collected straight from the canopy of the Southern Belize rainforest, and yeast. No molasses base. No added sugar, color, or flavoring of any kind. When the Copalli team set out to find the right cane for the job, they didn't reach for a high-yield commercial hybrid — they discovered two heirloom varieties of Noble Cane, black and red, that had been introduced to Belize back in 1848 and were still growing wild and self-propagating on land neighboring the distillery. They chose those varieties for one reason: taste. The cane is hand-cut within two miles of the distillery and pressed within two hours of harvest, a speed and freshness that fresh-cane rum production simply cannot fake.
This Over Proof expression takes that same three-ingredient foundation and pushes it further. The rum is 100% pot distilled — richer and more textured than Copalli's blended White Rum — then rested in American oak ex-bourbon barrels inside Belize's hot, humid rainforest climate, conditions that accelerate the spirit's interaction with the wood far beyond what a cooler aging environment like Kentucky or Scotland would allow. Rather than proofing the finished rum down to a standard 80 or 88 proof, this bottling is released at a robust 118 proof — full-bodied, bold, and built to carry serious weight in both a glass and a cocktail. The 2021 Ultimate Spirits Challenge awarded it 92 Points, recognition that places it among the more decorated expressions in the entire Copalli range.
The Copal Tree Distillery that produces every drop operates on a genuinely closed-loop, zero-waste basis — biomass-powered stills fueled by leftover cane fiber, production waste returned to the farm as compost, rainwater used throughout the proofing process. It's the largest non-governmental employer in Southern Belize, and the broader Organic Barrel Rested line has already earned a NYISC Double Gold. This Over Proof bottling takes that same sustainably-minded, three-ingredient philosophy and turns the volume up.
Copalli Rum is produced at Copal Tree Distillery, in the heart of the Southern Belize rainforest near Punta Gorda, on an estate that also includes Copal Tree Farm and the eco-conscious Copal Tree Lodge. The distillery was founded with environmental sustainability built into its core design: biomass-powered stills fueled by leftover sugar cane fiber, a zero refrigerant cooling system, rainwater-based proofing, and production waste returned to the farm as agricultural compost.
Every Copalli rum uses the same three ingredients — organic, non-GMO heirloom sugar cane, canopy rainwater, and yeast. The heirloom cane itself is the product of deliberate selection: two varieties of Noble Cane, black and red, introduced to Belize in 1848 and discovered self-propagating on land near the distillery, chosen specifically for the quality of their juice rather than agricultural efficiency. The Barrel-Rested Over Proof expression is distilled entirely through Copal Tree's pot still — 100% pot distillation, producing a fuller-bodied, more characterful spirit than the column-and-pot blend used in the White Rum — before resting in American oak ex-bourbon barrels. Belize's hot, humid climate dramatically accelerates the rate at which the spirit absorbs flavor from the wood compared to cooler aging climates, drawing out rich caramel, vanilla, leather, and baking spice character in a relatively short maturation window. Rather than proofing this particular batch down to the standard release strength, it's bottled at 118 proof (59% ABV) — a robust, full-strength expression designed for serious sipping and cocktail use alike.

Nose
Rich vanilla, toasted oak, and leather lead — the bourbon barrel's clearest imprint on the pot-distilled spirit, intensified by Belize's accelerated tropical aging. Caramel and orange peel add warm sweetness. Beneath the barrel character, the fresh-cut cane's grassy, vegetal signature remains noticeable — the genuine mark of an agricole-style rum rather than a molasses base.
Palate
Bold and full-bodied at 118 proof, opening with cinnamon and nutmeg spice that carries real intensity. Blackberries add dark fruit depth. Tobacco threads through with a savory, slightly smoky complexity. Orange zest and baking spice round out the mid-palate, the heat of the higher proof keeping every flavor vivid and present rather than muted.
Finish
Long, warming, and spiced — allspice, cardamom, and white pepper lingering well after the sip, true to the elevated proof. A creamy texture carries the close, balancing the heat with the same caramel and vanilla richness that opened the nose.
