This 11-year sherry cask expression from Kilchoman leans richly into dark fruit, spice, and smoky meat, while retaining just enough coastal clarity to remind you it’s an Islay whisky. It’s deep, resonant, and expressive—ideal for fans of sherried peat that still holds onto sea spray.
This whisky is part of Kilchoman’s 100 % Islay series, meaning all barley is grown, malted, distilled, matured, and bottled on the island—true farm-to-bottle provenance.
It is a marriage of barrels: 16 first-fill Oloroso sherry butts were selected for this release.
The spirit originates from barley harvested in 2011, 2012, and 2013, then matured for a full 11 years in those sherry butts (no additional finishing).
It’s bottled at 50.0 % ABV, with no added coloring and non-chill filtered, to preserve maximum flavor integrity and texture.
Kilchoman typically peats their “100 % Islay” barley lightly (≈20 ppm), so the peat is present but not overwhelming—sherry and oak influence are given room to shine.
Nose: Deep aromas of dried figs, black cherry, spiced plum, and raisin. Beneath that, notes of leather, tobacco leaf, and smoked meat (bacon fat, char), with a gentle trace of peat smoke and marzipan.
Palate: Rich and oily in texture. Dark fruit (blackcurrant, stewed plum) blends with toffee, molasses, baking spice (clove, cinnamon), charred wood, and an undercurrent of brine and smoke. The sherry casks contribute savory and dried-fruit complexity without tipping into heaviness.
Finish: Long, warm, and slightly drying. The tail is marked by lingering dark chocolate, roasted nut skin, a touch of saline peat, and black pepper. The sherry influence persists as a dry fruit echo rather than sweetness.
