Where Kilchoman's standard range demonstrates what the distillery's farm-to-bottle philosophy produces in ex-bourbon and sherry across broad production, the Cask Evolution series demonstrates something more specific: what happens when one of Islay's most powerfully peated spirits — the 50 PPM new-make from Rockside Farm's own floor malting — spends its maturation years in a sequence of carefully chosen casks that the ImpEx team selects, proposes, and releases exclusively for the American market.

The Ruby Port finish is among the most vivid and most immediately surprising of the Cask Evolution series' explorations. Origins & Craftsmanship

Kilchoman Distillery was established in 2005 on the northwest coast of Islay at Rockside Farm — becoming the first new distillery built on Islay in 124 years and the first farm distillery on the island since the 19th century. The founding philosophy was uncompromising: 100% Islay production from field to bottle, growing the barley on the farm, floor malting it on site, distilling, maturing, and bottling all on the island.
