Alessio Vino Chinato is produced by Tempus Fugit Spirits, a company dedicated to reviving historic European aperitif and cocktail ingredients. The recipe draws inspiration from 19th-century Italian chinato wines, a style traditionally made by infusing fortified wine with botanicals and cinchona bark, which provides a characteristic quinine bitterness.
Unlike vermouths that typically use neutral wine bases, Alessio Vino Chinato begins with Nebbiolo d’Alba, a prestigious grape from Piedmont, Italy, historically associated with Barolo wines.
The wine is then aromatized with a blend of herbs, spices, and cinchona bark, producing a layered profile of fruit, tannin, and botanical bitterness.
This approach places Vino Chinato stylistically somewhere between vermouth and Barolo Chinato, with greater structure and depth than most aromatized wines. It is bottled at approximately 16–16.5% ABV, allowing the wine base and botanical infusion to remain vibrant and expressive.
