Tequila Ocho built its entire reputation on a single, radical idea: that tequila, like the world's finest wines, is genuinely a product of terroir — that the specific ranch, soil, altitude, and microclimate where the agave grows imparts a character no blending or standardization can replicate. Every Ocho expression carries the name of the specific estate where its agave was harvested and the exact year of that harvest, making each bottle a genuine vintage statement rather than a repeatable, standardized product. La Mesa 2025 — "The Table" — is this year's chapter of that ongoing story, drawn entirely from Rancho La Mesa, a plateau northwest of Los Alambiques in the Los Altos highlands of Jalisco.
Despite its name, La Mesa's terrain isn't perfectly flat — it slopes gently southward, catching abundant sunlight across sandy, calcium-rich soil that's naturally fertile and free of stones, ideal ground for agave cultivation. The estate is home to more than 100,000 mature agave plants, and this vintage's harvest averaged a substantial 33 kilograms (72 pounds) per piña, with sugar content reaching 29% — genuinely high numbers that speak directly to the site's specific growing conditions at 2,200 meters (7,217 feet) above sea level, among the higher-altitude estates in Ocho's entire portfolio. Master Distiller Carlos Camarena, who founded Ocho alongside the late Tomas Estes at Tequilera Los Alambiques (NOM 1174) in Arandas, works exclusively with mature Blue Weber agave, aged 7 to 10 years before harvest — considerably longer than most tequila producers wait. The agave is hand-harvested at peak maturity, cooked slowly in traditional stone and brick ovens, fermented with wild yeast in open-air wooden vats, and twice-distilled in copper pot stills, following the same minimal-intervention philosophy across every Ocho expression.
For this Añejo, the finished spirit rests in used American oak whiskey barrels for a minimum of one year, layering genuine wood-derived warmth — vanilla, caramel, gentle oak spice — over La Mesa's own naturally bright, mineral-driven agave character. Blackwell's own tasting of this estate's sibling Plata and Reposado bottlings found a genuinely vivid expression of high-altitude terroir: fresh lime peel, green apple, tropical fruit, and herbs on the nose, with a palate that's minerally and earthy, carrying bright citrus, mint, cinnamon, and a touch of pepper, closing long and mineral-driven. In the Añejo, expect that same bright, citrus-and-herb-forward La Mesa signature carried now against real oak depth — roasted agave sweetness, vanilla, and baking spice layered over the estate's naturally high-sugar, mineral-rich foundation. This is single-estate, vintage-dated tequila in its most mature form: a genuine terroir statement, aged.
