Chamucos was founded in 1997 by film director Antonio Urrutia, alongside a caricaturist and a young entrepreneur, with production originally based at Tequila Quiote. The brand has since moved production twice — first to Feliciano Vivanco y Asociados in 2008, and ultimately to Premium de Jalisco, where it is produced today. Premium de Jalisco sources its 100% organic Blue Weber agave from growers in both the highlands and lowlands of Jalisco, since the high-altitude Mazamitla region itself — more rainforest than desert — is unsuited to agave cultivation. That cool climate does, however, allow for an unusually long 7-to-10-day fermentation and gives the aging warehouse a distinctive environment.

Production follows a traditional but modernized path: agave is slow-cooked in autoclave ovens, milled with a modern roller mill, and double-distilled in pot stills. The añejo expression ages 18 months in new, medium-char American white oak casks sourced from Kentucky — a longer and more deliberate oak program than the brand's reposado, which ages eight months in similar casks. Every batch is personally prepared and blended by master distiller and owner Mark Howard. The finished spirit is bottled in distinctive hand-blown glass bottles, sealed with a rubber stopper rather than a traditional cork — opened by applying pressure to each side in turn to release it.
