At its full, natural bottling strength of 50.3% ABV, the dominant character is fresh pear — bright, crisp, and immediate. Add what the distillery calls "one cut" of water, bringing the whisky down toward 40% ABV, and an entirely different dimension opens up: almond biscotti, warm and bakery-sweet, stepping forward as the pear recedes.
Matured in a union of ex-bourbon American oak and sherry-seasoned European oak casks, the 2023 Edition is bottled non-chill filtered and in natural colour, at genuine cask strength to preserve the full intensity that makes this dual-tasting concept work. Nose
