Every year, The Macallan releases a new Classic Cut, and the name itself is a direct homage to an old distilling tradition — the "cut," the point at which a distiller once determined the exact strength a whisky should be reduced to before bottling. Rather than making that decision for you, Classic Cut hands the choice back to the drinker: this is a whisky built to be experienced two genuinely different ways, and the difference between them is remarkable. At its full, natural bottling strength of 50.3% ABV, the dominant character is fresh pear — bright, crisp, and immediate. Add what the distillery calls "one cut" of water, bringing the whisky down toward 40% ABV, and an entirely different dimension opens up: almond biscotti, warm and bakery-sweet, stepping forward as the pear recedes.
Matured in a union of ex-bourbon American oak and sherry-seasoned European oak casks, the 2023 Edition is bottled non-chill filtered and in natural colour, at genuine cask strength to preserve the full intensity that makes this dual-tasting concept work. Master of Malt puts the experiment simply: "it's delicious at that strength, but we recommend pouring two drams and then diluting one with water down to 40% ABV. Do that and a whole new world of flavour opens up, making notes of toasted almonds more like biscotti and marzipan." Macallan's own campaign for the release leaned into that transformation with a genuinely playful concept — a runway-inspired presentation where "vibrant fabrics and colour choices evoke the freshness of the unique pear tasting note, whilst the flowing texture of a golden gown represents the almond biscotti flavour profile that is revealed with 'one cut' of water."

The Macallan Distillery was established in 1824 in Craigellachie, Moray, in the heart of Scotland's Speyside region, long celebrated for its exceptional cask selection and dedication to the mastery of both wood and spirit. Nose
Golden barley in color. Fresh, crisp pear leads, joined by floral elderflower, soft almonds, and rich vanilla pod. Some accounts add dried fruit, toffee, and subtle spice.
Palate
At full strength, pear dominates, carried on a velvety vanilla base with a hint of bright lemon zest against gentle oak. Add "one cut" of water, and almond biscotti and marzipan emerge as the leading character, softening the pear's initial intensity.
Finish
Medium in length, closing with a sweet caress of oak and the comforting flavor of almond biscotti — a finish that shifts meaningfully depending on whether the whisky is tasted at full strength or diluted.
