Origins & Craftsmanship

Produced by Penelope Bourbon, Omega is part of the Estate Collection of limited-edition straight bourbons. The mash bill is 78% corn, 10% rye and 12% malted barley. After over a decade of maturation, Omega undergoes a finishing phase in specially crafted French-oak barrels built by Radoux Cooperage using tight-grain, precision-selected staves (via OakScan® technology). This high-craft barrel process amplifies texture and complexity. The whiskey is bottled at around 109.8 proof (54.9% ABV) and represents one of Penelope’s most ambitious releases.

• Palate: Full-bodied and smooth — brown sugar and molasses give way to roasted pecans, dark chocolate, and a subtle wave of spicy rye pepper. French-oak barrel influence emerges as cedar and toasted marshmallow alongside dried fig.
