Widow Jane’s The Vaults is the Brooklyn distillery’s annual exploration of what different woods can do to its oldest and rarest bourbon. Over the past several years, Widow Jane set aside a cache of extraordinary, long-aged bourbons, and each year its head distiller and blender, Sienna Jevremov, assembles a blend in hyper-small batches, hand-assembled in groups of five barrels, from bourbons sourced from Kentucky, Tennessee, and Indiana. Each edition is then finished in a different oak, which gives collectors “a rare chance to experience how unique wood varietals shape the profile of mature bourbon.”
The 2025 edition, the seventh, is a marriage of bourbons aged a minimum of 15 years, finished in “Mythological Oak”: 1-to-2-year air-seasoned oak harvested from the ancient forests of Amfilochia, on Greece’s Mediterranean coast, a wood sacred to Zeus in Greek mythology. Widow Jane says it “lends evocative notes of wild honey, mountain sage, and dried fig, enriching the bourbon’s structure and length.” As with all Widow Jane whiskeys, it’s non-chill filtered and proofed with limestone-rich water from the Rosendale Mines of upstate New York, about 100 miles north of the Brooklyn distillery, and bottled at 99 proof (49.5% ABV). Only 15,672 bottles were made, with a nationwide launch on September 29, 2025.
The official tasting notes describe “rich, dark mulled fruit, burnt sugar, salty olive oil pastries, and forest aromatics,” rounded out by “complementary floral and citrus notes.” Drinkhacker, which scored it 8.5 out of 10 (B+), found the first aromas “a downright fascinating intersection of fruity and savory,” with “cranberry juice, mulled apple cider, fresh plums, and dried figs” leading, “alongside some sweetened black tea,” and the savory component “like a rich, oily tapenade,” with “a bit of caper and olive-laden salinity.” The early flavors are “more pastry-like than expected, with a big hit of glazed honeybuns.” Distiller’s community notes “vanilla cream, cinnamon sugar, and banana bread,” with warm spices from the oak finishing “like having an elevated Old Fashioned.”
It’s a unique, savory-and-sweet aged bourbon for collectors and adventurous drinkers, more complex and unusual than most 15-year-olds, and not a typical Kentucky-style bourbon. It’s also a meaningful gift for a milestone. Sip it neat, with a few minutes in the glass, or on the rocks.

Bottled at 49.5% ABV / 99 proof, 750ml. 15,672 bottles.
Drinkhacker — 8.5/10 (B+, November 2025):
“The first aromas are a downright fascinating intersection of fruity and savory. Cranberry juice, mulled apple cider, fresh plums, and dried figs lead, alongside some sweetened black tea. But the real curveball comes with the savory component, like a rich, oily tapenade. A bit of caper and olive-laden salinity lags just behind that fruit... Early flavors are more pastry-like than expected, with a big hit of glazed honeybuns on the first few sips.”
Distiller community (tasting notes):
“The sweet notes of the bourbon come through on the palate with vanilla cream, cinnamon sugar, and banana bread. The oak finishing provides warm spices to the bourbon like having an elevated Old Fashioned, but here you needn’t do anything but serve it on the rocks.”
Widow Jane (official tasting notes):
“Rich, dark mulled fruit, burnt sugar, salty olive oil pastries, and forest aromatics lead The Vaults 2025 taste experience, which is rounded out by complementary floral and citrus notes.”
