Sourced from Paso Robles and crafted by Daou Vineyards, this Cabernet Sauvignon is rooted in estate-grown fruit from the Adelaida District—known for its calcareous clay soils and elevation that recalls Bordeaux's balance of power and finesse. The wine is fermented using Daou’s native yeast and receives gentle oak aging (typically about 8 months in roughly half new French oak) to maintain vibrant fruit while adding texture.
