This is genuinely one of the oldest classic red bitters still in production anywhere, made by the same family since 1909, predating Campari by nearly half a century. What sets Cappelletti apart from its far more famous rivals is right there in the base: rather than the neutral spirit that underpins Campari and Aperol, Cappelletti is built on wine — mostly Trebbiano and other white wine grapes — giving it a genuinely vinous, rounded texture no spirit-based aperitivo can quite replicate.

The recipe traces back to Antica Erboristeria Cappelletti, first established in the historic Piazza Fiera in the center of Trento, focused from the very beginning on traditional herbs, roots, and flowers. Today the company operates from Aldeno, about 20 kilometers south of Trento, surrounded by vineyards and apple orchards, with every step of production handled in-house by the fourth generation of the family, Luigi and Maddalena Cappelletti. The wine base is infused with a proprietary blend of botanicals — bitter orange, cinchona bark, gentian, rhubarb root, and alpine herbs — macerated directly into the wine before filtering and sweetening. True to tradition, the deep crimson color comes entirely from natural carmine (cochineal), a genuine point of local pride historically tied to the region's own wealth.

The result sits in a genuinely distinct place between its two better-known rivals: less sweet than Aperol, less intensely bitter than Campari, at 17% ABV — noticeably higher than Aperol's 11%, but well below Campari's 25%.
