Produced by Caledonia Spirits in Montpelier, Vermont, Barr Hill Reserve Tom Cat Gin rises from the same craft ethos that made Barr Hill’s original gin signature—locally sourced ingredients, deep respect for terroir, and thoughtful distillation. What sets this Reserve through barrel aging is its maturation process: after distillation, the gin is rested in oak barrels, where time and wood interact to transform the botanical framework.
Tom Cat Reserve is aged for an extended period in small oak barrels (often American oak). This extended maturation integrates honey-influenced botanicals, juniper, citrus, and spice with barrel-derived notes of vanilla, toasted oak, nutmeg, and cinnamon—softening edges, adding warmth, and amplifying mid-palate richness. Barr Hill’s resident honey component (wildflower honey from the distillery’s own apiary) also plays well with barrel influence, reinforcing a subtle sweetness that’s organic rather than cloying.
