This release pairs two entirely separate whiskey traditions in a single bottle: 18-year-old Kentucky whiskey finished in Cabernet Sauvignon barrels, married with Canadian whiskies aged 23 to 25 years and finished in Sauternes barrels from Bordeaux. The Cabernet component brings structure and dark-toned warmth — dark fruit, tannin, real depth — while the Sauternes casks pull the opposite direction entirely: golden, honeyed, and softly sweet. Neither dominates. As Barrell's own team puts it, "neither overwhelms the other. Instead they meet somewhere in the middle, producing a whiskey of unusual sophistication."

Breaking Bourbon's independent review found the whiskey drinks considerably lighter and more approachable than its considerable 125.24 proof would suggest, describing "gentle scents of 1980s baseball card pack bubble gum, cherry cream, rose petal, strawberry, and peach" on the nose, with cherry, plum, and a creamsicle note carrying through the palate, tempered by light cinnamon, vanilla, and oak, closing on "whimsical notes of loganberry, followed by apricot and golden raisin" — calling it, in a lot of ways, "a spiritual successor to the company's Seagrass line." This release is part of Barrell's Black Label Series, a program specifically designed to showcase the company's most cutting-edge blending methods and techniques. It combines an 18-year-old Kentucky whiskey finished in Cabernet Sauvignon barrels with Canadian whiskies aged 23 to 25 years, finished in Sauternes barrels sourced from Bordeaux. As with virtually all Barrell releases, the exact distillery sources for both components remain undisclosed. The two blends were distilled separately in Kentucky and Canada, matured independently, then expertly crafted and bottled together in Kentucky at a cask strength of 125.24 proof (62.62% ABV), released March 26, 2026.

"Despite its 125.24 proof point, Barrell Whiskey 18 Year Finished in Cabernet Sauvignon and Sauternes Barrels drinks light and is more approachable than you'd expect it to be. This helps bring out its fruit-forward flavor profile in a balanced manner. The aroma is soft, with gentle scents of 1980s baseball card pack bubble gum, cherry cream, rose petal, strawberry, and peach. Likewise, cherry continues into the palate and is joined by plum and a creamsicle note. This fruitiness is nicely offset by tempered notes of light cinnamon, vanilla, and light oak. The finish starts with whimsical notes of loganberry, followed by apricot and golden raisin, concluding with white pepper and light toasted oak. In a lot of ways, this tastes like a spiritual successor to the company's Seagrass line of products."

The finish turns a bit sweeter, reminiscent of both fruit (Concord grape juice) and shortbread (pecan sandies). A few drops of water help pull a few of the more interesting flavors forward on the palate, particularly raisins."
