Cuishe is genuinely one of the most physically distinct agave species used in mezcal — a subspecies of the Karwinskii family that grows vertically as a single stalk, with its leaves spreading only at the very top, an unusual growth structure that also makes it notoriously difficult to harvest. That difficulty is exactly why Cuishe is rarely used commercially: its unusual shape and firm piña material make the plant genuinely labor-intensive to work with, a genuine point of pride for the mezcaleros willing to take it on. Bozal built this expression entirely around that rare agave, sourced from the steep, precarious hillsides of Oaxaca and Guerrero, in keeping with the brand's broader commitment to celebrating wild, indigenous varieties most producers overlook.
Production follows fully traditional methods throughout: agave hearts slow-roasted in earthen pit ovens, crushed and naturally fermented, then double-distilled in copper stills by master mezcaleros. This bottling earned a genuine 95 Points from The Tasting Panel — real, independently judged confirmation of quality for a spirit already prized among serious agave collectors for its distinctive character.
Wine.com's official tasting notes describe the mezcal as "driven by intense citrus and strong minerality," with "a dry entry," developing into "rich tropical fruit on the palate that moves to sweet potato on the front," with "green vegetal notes in the mouth and a dry smoky finish" following — "a complex flavor profile that proves quite enjoyable." A separate independent tasting found "the nose delicately woodsy, with sandalwood and black pepper," the palate showing "grilled pineapple and a lanolin-based floral tone sweetness" playing "alongside saddle leather and clay," with "a generous" finish. Master of Malt's own tasting confirms "sugarcane, black pepper, pine resin and soft smoke."
