Finding the right sherry cask for this bourbon took Breckenridge Distillery all the way to Andalusia, Spain — and, by founder and CEO Bryan Nolt's own account, it took some real searching to land there. "Our search for the perfect Sherry was unbalanced until we made it all the way to the concentrated and creamy side of the Sherry spectrum and found the perfect match, Pedro Ximénez," he explained. What the team acquired were genuinely rare finishing barrels: retired PX casks rotated off a solera stack hundreds of years old, meaning each one had spent decades holding some of the most viscous, syrupy dessert wine in the world before ever touching a drop of bourbon.

A mainly dry and slightly tannic aftertaste that errs slightly more on the spicy than sweet side. Noticeably, the barrel finish and base whiskey are more closely connected with this release than in the Port Cask Finish. The sherry finish does a better job integrating with the whiskey and allowing both parts to shine. It's a bit drier than it needs to be and possibly older whiskey stock with more barrel char influence might have brought out more sweet notes to counter the dryness and spiciness.
