Castello di Querceto has been in the same family's hands since 1740 — nearly three centuries of continuous winemaking in Greve in Chianti, at the very heart of the Chianti Classico zone, now guided by the fifth generation. The estate built its modern reputation on premium Chianti Classico using the region's most treasured grape varieties, but tucked within that broader portfolio sits something considerably older in spirit: a Vin Santo made using the same patient, labor-intensive method that Tuscan families have relied on for centuries to turn late-harvest white grapes into liquid gold.
This is not a wine produced at scale. It comes from a single one-hectare vineyard, planted specifically to Malvasia Toscana, Trebbiano Toscano, and San Colombano — a combination that leans on Trebbiano and Malvasia's classic Tuscan Vin Santo pedigree while adding San Colombano's own local character to the blend. After harvest, the grapes are laid out to dry for three full months before pressing — the passito method that concentrates sugar, acid, and flavor as the fruit slowly loses its water content, exactly as Tuscan winemakers have done since long before anyone thought to call it a formal production technique. The must is then transferred into 100-liter oak caratelli, the small traditional casks unique to Vin Santo production, where it ages for three years before bottling — followed by an additional three months of maturation at the winery prior to release.
The result is a golden-colored dessert wine with amber reflections, rich with honey, walnuts, and raisins on the nose, and a palate that is slightly sweet, velvety, and harmonious — caramel, toffee apple, and almonds coming to the fore, joined by dried fig, sultana, leather, and gentle balsamic notes. Soho Wine Supply called it "a wonderful accompaniment to a cheese board" and "a remarkable example of a traditionally-made Vin Santo from Chianti." Yorkshire Vintners specifically noted its "great ageing potential." From a family that has been farming this same corner of Tuscany since 1740, in the 500ml half-bottle format that has always been the traditional and specifically appropriate presentation for a wine meant to be savored slowly, in small pours, at the very end of a meal.
Castello di Querceto is a family-owned winery founded in 1740 in Greve in Chianti, within the Chianti Classico production zone of Tuscany — one of the oldest continuously operated estates in the region, now guided by its fifth generation. The estate maintains an extensive production structure at its heart, near the castle itself, encompassing warehouses, a bottling hall, and four separate cellars dedicated to the different stages of wine production — fermentation and initial processing, storage, and aging — alongside dedicated spaces specifically for Vin Santo production and aging, as well as extra virgin olive oil production. The estate's premium red wine crus and Chianti Classico Gran Selezione and Riserva bottlings mature in barriques and tonneaux of Allier, Tronçais, and Limousin oak, alongside small oak casks ranging from 10 to 40 hectoliters — the same historic cellar that houses selections of the estate's finest vintages dating back to 1904.
The Vin Santo is produced from a single, dedicated one-hectare vineyard planted to Malvasia Toscana, Trebbiano Toscano, and San Colombano — the traditional white grape varieties of the Chianti Classico zone specifically reserved for this style of wine. Following harvest, the grapes are laid out and dried for three months — the passito technique that concentrates the fruit's natural sugars, acids, and aromatic compounds through gradual water loss — before pressing. The resulting must ferments and matures for three years in 100-liter oak caratelli, the small traditional casks specific to Tuscan Vin Santo production, whose modest size and long, slow oxidative aging produce the wine's rich color and complex secondary character. After the three years in caratelli, the wine is bottled and undergoes a further three months of maturation at the estate before release.
Nose
Golden amber color with rich amber reflections — the three years in small oak caratelli producing genuine depth and warmth. Rich honey, walnuts, and raisins open the nose with classic, deeply traditional Vin Santo character. Dried fig and sultana add further concentrated dried-fruit complexity. Leather and gentle balsamic hints add a specifically aged, oxidative secondary quality that confirms the wine's patient caratelli maturation.
Palate
Slightly sweet and velvety, with a genuinely harmonious balance between sweetness and structure. Caramel and toffee apple carry warm, concentrated sweetness. Almonds add a classically Tuscan nutty secondary flavor. Ripe apple adds fresh fruit brightness that keeps the wine from feeling heavy. Nuts and dried fig continue through the mid-palate with layered, patient complexity.
Finish
Long and harmonic, with honey, caramel, and leather lingering alongside the balsamic and nut character. A wine specifically noted for its aging potential — capable of continuing to develop in bottle well beyond release.
