Bethel Romelus is a devoutly religious man, and when he built his small distillery in the village of Pignon in Haiti's Nord region, he built it — quite literally — on a rock. He named it Le Rocher in direct reference to the Gospel of Matthew: "the foolish man builds his house on the sand, and the wise man builds it on the rock." It's a fitting name for a rhum that has, in the years since its 2017 launch, become one of the most respected and most sought-after expressions in the entire Clairin category — a genuinely uncompromising, wholly artisanal Haitian spirit that stands apart from virtually everything else on the shelf.

Le Rocher begins with cane syrup made from the Cristalline variety, grown without chemicals in Saint Michel de l'Attalaye and brought to the distillery, where it's diluted to precisely the right brix level for completely natural, wild fermentation — no commercial yeast, no shortcuts, just the ambient microflora of Pignon itself doing the work. During the unusually long fermentation, dunder — the residue left over from the previous batch's distillation — is added back into the must, a traditional technique closely related to the "Grand Arôme" method that dramatically boosts the intensity and complexity of the finished spirit. Origins & Craftsmanship

Distillerie Le Rocher is located in the village of Pignon, in Haiti's Nord region — one of 532 registered artisanal Clairin distilleries across the country, and one of the most widely respected among them. Owner Bethel Romelus, brother of a priest, named his distillery for the biblical parable of the wise and foolish builders found in Matthew 7:24-27, building his operation directly on the rock the name references. Clairin Le Rocher was first launched in 2017 and has since become one of the most consistently praised expressions in the entire Clairin category — a category defined by small-scale, single-distillery production using entirely traditional Haitian methods, distinct from the larger, more industrial rhum operations found elsewhere in the Caribbean.

Tasting Profile

Nose
Clear and translucent in the glass. Vegetal and smoky at first, with pine, licorice, straw, and cut grass leading the aromatic profile. Pineapple, aloe vera, and bell pepper add tropical and slightly funky character, alongside earthy honey. Floral briny olive notes thread through, potent and immediately arresting.

Palate
Voluptuous and spicy, opening with chili pepper and dusty red clay earth. Ripe fruit and butterscotch add rounded sweetness, balanced against exotic spice, soft vanilla, and sweet coconut.
