Clairin Pignon comes from a genuinely unusual figure within the clairin world — Boss Méles Augustin Normil, a master metalworker and engineer by trade (the title "Boss" is reserved in Haiti for someone at the absolute pinnacle of their craft), who built and maintained cane presses for a living before distilling clairin on the side as a hobby that eventually grew into a real local business. He works out of Pignon, on Haiti's central plateau, one of the country's top sugarcane-producing regions, and has become genuinely known for a local production style unlike most other clairins: rather than fermenting fresh-pressed cane juice, Méles builds his clairin from cane syrup sourced from nearby producers, blended with vinasse — the dense, leftover matter saved from the bottom of the still after a previous distillation, collected in a vat or a hole in the ground and reused to kickstart the next fermentation. It's the exact same dunder technique Jamaican rum producers are famous for, applied here to a Haitian sugarcane spirit — a genuinely rare crossover within the category.
The syrup-and-vinasse mixture ferments naturally in large, open-top vats for 10 to 15 days, then goes through a small pot still twice, resting before being bottled entirely by hand at full, undiluted strength — meaning proof genuinely varies batch to batch, typically landing somewhere between 50% and 53.6% ABV.
