The Del Dotto family name has been associated with winemaking since 1150 — a heritage stretching back to medieval Venice, carried forward across centuries until Dave Del Dotto brought it to Napa Valley in 1988, when he and his wife Yolanda stumbled upon a 1912 Frank Lloyd Wright craftsman house in Rutherford during a wine-buying trip and decided, with the kind of impulsiveness that only genuine passion produces, to stay. The first Del Dotto vintage was 1993. Thirty-plus years later, the family has acquired 67 planted acres across Napa Valley's most iconic appellations — Rutherford, Oakville, St. Helena, Howell Mountain — largely in service of the Cabernet Sauvignon that built the Del Dotto reputation.
But in 2004, Dave Del Dotto made what he has called one of the finest property acquisitions the family ever made: 41 acres in the Fort Ross-Seaview AVA on the Sonoma Coast, including the Cinghiale Vineyard — "cinghiale" meaning wild boar in Italian, a name as evocatively rustic as the terroir it describes. Fort Ross-Seaview is one of the most extreme and most specifically maritime-influenced AVAs in California: established in 2011, perched above the fog line at elevations that place many of its 506 planted acres directly in the path of Pacific wind and cool air, with gravelly loam soils derived from metamorphic rock that produce Pinot Noir of unusual structure and aromatic complexity. The AVA guide's own characterization is direct: "vibrant cherry, earthy notes, and a silky texture, ideal for those seeking finesse."
The Cave Collection designation reflects Dave Del Dotto's own philosophy — "wine is a reduction sauce, and the barrel is the spice rack" — the conviction that barrel selection and barrel-aging philosophy are as important to a wine's final character as the vineyard itself. The 2021 vintage from this same Fort Ross-Seaview source offered dark raspberry, cherries, and blueberries on the nose alongside bacon fat, mocha, clove, cinnamon, cardamom, white pepper, and old cedar box — aromatics that one reviewer noted made the wine difficult to identify as Pinot Noir in blind tasting, so distinctive is the Cinghiale Vineyard's specific expression. Del Dotto Estate Winery & Caves was founded in 1988 by Dave Del Dotto, whose family name carries a winemaking heritage dating to 1150 in Venice. The nose opens with dark raspberry, cherries, and blueberries — the Cinghiale Vineyard's signature dark-fruited Pinot Noir profile, deeper and more concentrated than warmer-climate Sonoma Pinot. A distinctive savory note — described by prior reviewers as "bacon fat" — adds an umami-rich, smoky dimension that is genuinely unusual for the variety and one of the most specifically Cinghiale-distinctive qualities in the entire Del Dotto portfolio. The entry is silky, with an exciting liveliness that carries weight and concentration with finesse rather than heaviness — a tension between richness and freshness that reflects the vineyard's wind-driven cool nights. Black tea and intense black cherry add further layered complexity at the palate's core.
Finish Fine-grained, polished tannins linger seamlessly with a subtle drying character on the fruit- and barrel-influenced finish. The espresso and roasted coffee notes persist longest, joined by cedar box and a lingering dark chocolate richness.
