Desert Door Texas Sotol Conservation Series #3 “Pollinator” is one of the distillery’s most distinctive limited releases—an aromatic, botanical-driven expression that pushes sotol into territory reminiscent of a desert-inspired gin. Infused with native Texas botanicals such as mesquite, grapefruit, and honeysuckle, it delivers bright floral character layered over the earthy backbone of wild sotol. Equally notable is its mission: the bottle celebrates and supports pollinators—especially native bees—making it a flavorful spirit with an environmental purpose.
Desert Door Distillery in Driftwood, Texas produces sotol from the wild Dasylirion (desert spoon) plant, which grows naturally throughout West Texas and the Chihuahuan Desert. Like tequila and mezcal, the plant is cooked, fermented, and distilled into a clear spirit, but sotol has its own distinct desert-herb profile.
The Conservation Series was created to highlight environmental causes connected to the landscapes where sotol grows. The third release in the series—Pollinator—focuses on the ecological importance of bees and other pollinating species. A portion of proceeds from each bottle supports land conservation and efforts to restore native bee populations through Desert Door’s nonprofit initiative, Wild Spirit Wild Places.
For this expression, Desert Door’s original sotol is infused with native Texas botanicals including mesquite, grapefruit, and honeysuckle, plants that depend on native bees for pollination. These botanicals give the spirit an unusually aromatic and floral profile—almost reminiscent of a botanical gin while retaining sotol’s earthy desert character.
Bottled at around 45% ABV (90 proof), Pollinator offers a vibrant, cocktail-friendly strength with enough structure for sipping neat.
Nose
Floral and fragrant with honeysuckle, clover, vanilla, and fresh desert herbs.

Bright and layered—vanilla custard, mesquite bean, rosemary, and soft citrus with the herbal character typical of sotol.
