Single pot still is Ireland's own, singularly distinctive whiskey style — a blend of malted and unmalted barley distilled together in a traditional copper pot still — and for the better part of a century, only Irish Distillers, working out of Midleton, kept the tradition alive. Dingle Distillery became the first distillery outside that Midleton lineage to release a genuine single pot still whiskey, building its reputation on the style through a devoted, years-long series of limited small-batch releases beginning in 2018, culminating in a fifth and final batch in 2022. That patient groundwork paid off in 2025, when Dingle finally made Single Pot Still a permanent, year-round core release — no longer a limited chase, but a whiskey you can now count on finding.
The recipe follows the classic Irish pot still ratio: 60% malted barley and 40% unmalted, locally sourced and combined in Dingle's own wooden mash tun, then triple distilled through the distillery's three copper pot stills. What sets this whiskey apart from Dingle's own Single Malt is the cask program — rather than the Single Malt's two-cask approach (Pedro Ximénez sherry and bourbon), the Single Pot Still is matured in a genuine four-way marriage: hand-selected bourbon, Oloroso sherry, Pedro Ximénez sherry, and red wine casks, each contributing its own distinct layer of depth and complexity. As the distillery's own copy puts it, the whiskey is "shaped by Irish tradition yet defined by the individuality of its home on the Atlantic coast," evolving under the influence of Dingle's own coastal microclimate. Bottled at 46.5% ABV, non-chill filtered, with no added color.
Because this is a genuinely new permanent expression, independent critical reviews specific to this exact release are still emerging — but the predecessor small-batch series it grew out of gives a strong sense of house style. The Whiskey Wash's review of the fourth batch release found it "initially sweet with a burst of spice," with "dark fruits, figs and raisins" coming to the fore, "followed by dark chocolate and a sprinkling of chopped nuts," the finish letting "the dark chocolate dissipate" as "the spice returns." The fifth and final batch release, bottled in part at cask strength, was described as "rich and smooth with notes of dried raspberries, butter mints, white chocolate, flaked almonds, soft wood spice and leather, ending in a long, memorable finish." This new permanent core release carries that same lineage forward — genuine Irish pot still tradition, distilled by the house that helped bring the style back from the brink.
Dingle Single Pot Still Irish Whiskey is produced at Dingle Distillery, founded in 2012 in County Kerry, one of the true pioneers of Ireland's craft distilling revival. Dingle holds a genuinely significant place in Irish whiskey history as the first distillery outside the Irish Distillers/Midleton lineage to release a single pot still whiskey in generations — a style built around a mash of malted and unmalted barley distilled together, distinct from single malt's all-malted-barley recipe. Dingle spent five years building this whiskey's reputation through a series of small-batch, limited releases beginning in 2018 and concluding with a fifth and final batch release in 2022 (which included a portion bottled at cask strength, 59.5% ABV, from a total run of 9,000 bottles). In 2025, the whiskey graduated to a permanent, year-round core release.
The whiskey is made from a recipe of 60% malted barley and 40% unmalted barley, both locally sourced and combined in Dingle's traditional wooden mash tun, then triple distilled through the distillery's three copper pot stills — each with a 3,000-liter capacity, running 6 to 8 hours per cycle — using water drawn from the distillery's own well, 70 meters below ground. The whiskey matures in a marriage of hand-selected bourbon, Oloroso sherry, Pedro Ximénez sherry, and red wine casks, each contributing distinct layers of flavor. Production is overseen by a 20-person team led by Paddy Foley, with the distillery operating seven days a week and bottling entirely on site. Bottled non-chill filtered, with no added color, at 46.5% ABV / 93 proof.

Nose
Sweet, peppery pot still spice leads, joined by dark fruit notes — fig and raisin — with a rich, layered sweetness reflecting the whiskey's four-cask maturation program.
Palate
Initially sweet with a genuine burst of spice, dark fruits and dried raspberry carry through, joined by dark chocolate, butter mints, white chocolate, and chopped or flaked almonds. Soft wood spice and leather add structure.
Finish
