Honoré Pascal was a big man. In the village of La Cadière d'Azur — the hilltop Provençal village that sits above the Bandol appellation a few kilometers from the sea — every villager received a nickname, and Honoré's was "Gros Noré": big Honoré. When his son Alain Pascal took over the family domaine, he named it after his father. A tribute to his imposing stature, his love of work well done, and the passion for Bandol that he transmitted to the son who now makes one of the appellation's most celebrated and most specifically sought-after rosés.

The production philosophy at Gros Noré is the most traditional and the most specifically artisanal in the Bandol appellation: organic viticulture with no herbicides or chemical insecticides, natural yeast fermentation, 24 hours of cold skin maceration before fermentation begins, and bottling without fining or filtration. Every grape is hand-harvested and controlled bunch by bunch by the winemaker. The domaine's 17 hectares occupy the hillsides of La Cadière d'Azur, including the highest north-facing limestone vineyards in the entire Bandol appellation — sites whose coolness and mineral precision contribute the outstanding freshness and vitality that distinguishes Gros Noré from the more commercially oriented Bandol producers on the valley floor.

Origins & Craftsmanship

Domaine du Gros Noré occupies 17 hectares of parcels on the hillsides of La Cadière d'Azur — the medieval hilltop village whose elevated position above the Bandol appellation gives the domaine's vineyards the most specifically cool, the most specifically limestone-influenced, and the most specifically freshness-preserving terroir available in the AOC. The domaine takes its name from the nickname of Alain Pascal's father Honoré — "Gros Noré," big Honoré — whose love of Bandol farming and whose specific passion for the Mourvèdre-driven wines of this corner of Provence were transmitted directly to the son who now produces some of the appellation's most celebrated bottles.

The Mourvèdre's specific contribution — structure, weight, blood orange rind, garrigue aromatic character, and the cellar-worthy depth that this variety brings to every wine it dominates — is the most defining quality in the glass. Cinsault adds freshness and a softer fruit accessibility. Grenache rounds the blend into something harmonious.

The production method is the most specifically and the most clearly artisanal in any Bandol rosé currently in the Blackwell's section. The must is first cooled, then spends 24 hours on skins before fermentation — a maceration that extracts the Mourvèdre's aromatic compounds, natural pigments, and textural glycerol with a completeness that the direct-press methods of commercial Provence rosé producers cannot approach, producing both the salmon depth of color and the "rich and fleshy" palate texture that makes Gros Noré specifically and immediately distinguishable from lighter expressions.
