Soave Classico is not simply Soave with a fancier name attached. It's a legally protected designation, reserved exclusively for wine grown within the original, historic production zone that runs from the town of Soave eastward to Monteforte d'Alpone — the ancient heart of the appellation, before the broader Soave region expanded dramatically in the mid-to-late 20th century and, in the process, diluted the general quality reputation of wines simply labeled "Soave." The Classico designation exists specifically to preserve and highlight what the traditional terroir can do, and Farina's version has been produced from this exact historic ground for generations.
The Farina family's roots in agriculture and winemaking trace back to the beginning of the 16th century — five hundred years of continuous presence in this corner of the Veneto. Remo Farina brought the most modern winemaking concepts of his era into conversation with those centuries of accumulated, time-tested method, and today the estate is managed by the new generation, continuing to produce fresh, elegant whites alongside the more structured reds — Valpolicella, Amarone, and Recioto — that have built the Farina name's broader reputation.
The 2025 Soave Classico is built primarily from Garganega — 85% of the blend, completed with Trebbiano di Soave and Pinot Bianco — grown on morainic-calcareous-clayey soils across northeast and southeast-facing hillside vineyards within the historic Classico zone. Production is entirely traditional: the grapes are pressed and destemmed immediately after harvest, given a short maceration, then fermented at controlled temperature using selected yeasts before racking and decanting roughly ten days later. The wine ages entirely in stainless steel, with a further period of refinement in bottle before release — no oak is used at any stage, preserving Garganega's natural freshness and floral character. The house tasting notes describe scents of elderflower and wildflowers on the nose, savory and fruity on the palate, with notes of green apple, pineapple, and golden plum — a dry, gentle, velvety wine of delicate elegance, built for immediate enjoyment at the table.
Farina traces its agricultural and winemaking roots to the beginning of the 16th century, based in Valpolicella Classica in the Veneto, with vineyard holdings spanning both Valpolicella and the historic Soave Classico zone. The estate draws grapes from 45 hectares of selected vineyards, ten belonging directly to the Farina family and the remainder farmed by longtime, trusted grower-contributors who have worked with the estate for years and are committed to producing only the highest-quality fruit. Remo Farina combined modern winemaking technology with the family's centuries of traditional, time-tested method, and the estate continues today under the direction of the newest generation.
The Soave Classico is sourced from hillside vineyards in the Soave DOC's historically designated Classico zone — the original, protected production area running from the town of Soave to Monteforte d'Alpone, established specifically to distinguish the region's traditional, highest-quality terroir from the broader Soave zone that was expanded significantly in the mid-20th century. The blend is 85% Garganega, completed with 15% Trebbiano di Soave and Pinot Bianco, grown on morainic-calcareous-clayey soils with northeast and southeast exposures. Following harvest, grapes are pressed and destemmed, given a short maceration, then the must is separated, cleaned, and fermented at controlled temperature with selected yeasts, followed by racking and decanting after approximately ten days. The wine matures entirely in stainless steel before a final period of refinement in bottle — no oak is used at any stage.
Nose
Delicate elegance defines the nose from the first pour. Elderflower and wildflowers lead with fresh, floral brightness, characteristic of Garganega grown in the historic Classico zone.
Palate
Dry, gentle, and velvety, with a savory and fruity character running throughout. Green apple and pineapple carry vivid fresh fruit brightness, joined by golden plum for warmth and roundness.
Finish
Clean and warm, with the wine's characteristic minerality and gentle texture carrying through to a genuinely food-friendly close — an easy, elegant Soave built for the table rather than extended contemplation.
