The name says everything: Penultimus, the second-to-last chapter, arrives as the 30th release (Mark XXX) in Foursquare's legendary Exceptional Cask Selection series — the marquee collection that master distiller Richard Seale has personally curated, one landmark cask at a time, since its inception. And this particular entry carries a genuine, first-of-its-kind distinction within that entire storied run: it's the very first Exceptional Cask Selection release ever to incorporate Spanish Moscatel wine casks, a production milestone in a series now thirty editions deep.
The blend brings together two distinctly matured single-blended rums, each combining distillate from Foursquare's copper double-retort pot still and continuous twin-column Coffey still. One component aged the full 15 years entirely in ex-bourbon casks; the other spent 10 years in ex-bourbon before being re-racked into rare ex-Moscatel casks for a final 5 years, layering bright citrus, tropical fruit, and a gentle vinous sweetness over Foursquare's rich, herbal rum backbone. Every drop aged entirely on-site in St. Philip parish, on Barbados's southeastern coast, where the tropical climate drives an estimated 6 to 8 percent of the barrels' volume away each year to evaporation — the genuine cost of true tropical aging, and precisely what gives Barbadian rum its concentrated intensity relative to rum matured in cooler climates.

Foursquare Rum Distillery was founded in 1926 in the parish of St. Philip, on the southeastern coast of Barbados, and remains, four generations later, under the stewardship of the Seale family, guided today by Master Distiller Richard Seale. The distillery has earned "Rum Producer of the Year" honors multiple times at the International Spirits Challenge, and its Exceptional Cask Selection series — a personal, one-off, hand-curated collection of limited releases — has achieved genuine cult status among rum connoisseurs worldwide, exploring finishes in casks that have previously held sherry, port, Madeira, cognac, and zinfandel, among others.
Penultimus, the 30th release (Mark XXX) in that series, is a single blended rum combining distillate from Foursquare's double-retort copper pot still and continuous twin-column Coffey still — the traditional method the distillery uses to balance the heavier, more aromatic, ester-driven character of pot-distilled rum against the cleaner profile of column-distilled rum. The blend brings together two components: one matured the full 15 years entirely in ex-bourbon casks, the other aged 10 years in ex-bourbon before spending a final 5 years in rare ex-Moscatel wine casks — the first time Spanish Moscatel casks have ever appeared anywhere in the Exceptional Cask Selection series. Nose

Palate
Soft, oily, and sweet, with a genuine sense of freshness — golden melon, ripe pineapple, gentle caramel, and more dark chocolate. Citrus, white peach, and lychee build tropical brightness against rich, dark fruit, cocoa, and raisin, with grape-skin dryness reflecting the Moscatel component.
Finish
Grippy and long-lasting, opening with a tangy, juicy lemon sherbet rush before giving way to green-grape-skin astringency that lingers and lingers. Warming, slightly tannic, with oak spice carrying through a genuinely extended close.
