Few stories in modern Scotch whisky are as genuinely dramatic as GlenAllachie's — built in 1967, the distillery spent decades in near-total obscurity as an anonymous blending workhorse, its whisky disappearing into other brands' bottles without ever carrying its own name. That changed in 2017, when industry veteran and qualified chemist Billy Walker — the very same man behind the revivals of BenRiach and GlenDronach — purchased the distillery from Pernod Ricard, alongside Graham Stevenson and Trisha Savage. Walker applied his own signature approach immediately: exceptional sherry cask sourcing, bottling at 46% ABV, non-chill filtered, with no added colour. The whisky itself is an unpeated Speyside single malt made from 100% Scottish barley, fermented for an unusually long 160 hours specifically to build additional complexity, then matured on-site in a three-way marriage of Pedro Ximénez sherry, Oloroso sherry, and virgin American oak casks — the Oloroso providing dry, nutty backbone, the PX adding dark fruit richness, and the virgin oak contributing spice and structure. The World Whiskies Awards' own judges described the flavor profile as "dried apple, gourmet chutney, orange zest, nutmeg and cinnamon." The GlenAllachie 12 Year Old Speyside Single Malt Scotch Whisky is produced at The GlenAllachie Distillery, built in 1967 in Speyside, Scotland, and purchased in 2017 by Billy Walker, Graham Stevenson, and Trisha Savage. The whisky is an unpeated single malt made from 100% Scottish barley, fermented for 160 hours to build complexity, then matured on-site in a three-way combination of Pedro Ximénez sherry puncheons, Oloroso sherry casks, and virgin American oak barrels.
