Amontillado is the rarest style of sherry produced in Jerez. It begins as Fino — the lightest, most delicately flor-aged sherry — and then, in those barrels where the flor yeast dies naturally rather than being maintained, it transitions oxidatively into something more complex, more nutty, more specifically aged than either Fino or Oloroso alone achieves. The Amontillado sherry casks are from the Spanish sherry region of Jerez and are the rarest of sherry casks — every year, Amontillado casks make up less than 5% of all Glenfiddich's imported sherry casks, illustrating their rarity and desirability.
Introduced in 2022, this Special Edition is finished in rare Amontillado sherry casks — a secondary maturation that bumps the ABV from the traditional 40% of standard Glenfiddich to a more assertive 43%. The result was assessed by The Whisky Study as something genuinely more than marketing: "the Amontillado finish hits with all the notes of mulled wine and rancio you'd expect from other more famous sherried Scotches." The Whiskey Wash confirmed it: "a solid entry into the world of sherry-cask-influenced whiskies — somewhat considered a sherry bomb, but not overly aggressive in that niche. An all-around good daily sipper."

Glenfiddich was founded in Dufftown, Speyside in 1887 by William Grant — whose family built the distillery stone by stone before its first distillation on Christmas Day of that year, and whose fifth-generation descendants maintain entirely family ownership today. The Glenfiddich 12 Year Old Sherry Cask Finish is a Special Edition single malt Scotch whisky matured for 12 years in American and European oak sherry casks before finishing in Amontillado casks, adding lively notes of dried fruits and a delicately spicy finish.
The production architecture has two distinct stages. The primary 12-year maturation takes place in a combination of American oak ex-bourbon barrels and European oak sherry-seasoned casks — the standard Glenfiddich maturation program that develops the house character of fresh orchard fruit, vanilla, and gentle Speyside floral elegance. The Amontillado finishing stage then adds the specific sherry character that distinguishes this expression from the standard 12 Year Old: the mulled wine, rancio, nuttiness, and dried fruit complexity that only Amontillado — in its unique position between Fino's freshness and Oloroso's richness — contributes.
The 43% ABV — three degrees above the standard Glenfiddich 12 Year Old's 40% — is the production decision that most immediately communicates the Special Edition's premium ambition. The additional proof delivers more presence and more warmth, better supporting the Amontillado finish's more assertive flavor contributions. The expression is presented in a distinctive red presentation tube that makes it one of the most visually identifiable Special Edition Glenfiddich expressions on any shelf.
The Whiskey Wash: "Sweet and nuts on the nose, conveying that sherry cask influence right out of the gate. Notes of orange marmalade, green apples, strawberry jam, a little bit of oak, and dark chocolate. On the palate, it is all about the nuttiness, conveying alongside it a good amount of sweet treat goodness. Beyond these opening notes, you get bubble gum, oak, dark cherry chocolate, peaches and cream, and a pleasant vanilla note. Orange marmalade arrives with the slightly bitter-sweet citrus quality that is Amontillado's most specific fruit contribution — warmer and more concentrated than Fino, less purely dried and oxidative than Oloroso. Green apples carry the Glenfiddich house character of fresh orchard fruit through the sherry influence — present and recognizable as the distillery's signature beneath the finishing cask's more recent additions. Strawberry jam adds a fresh berry sweetness. Dark chocolate and a little oak add secondary depth. Raisins and plum add the deeper dried fruit register of the Amontillado's fully developed character. Palate Beautifully sweet and full of nuttiness — the Amontillado sherry's most specific and most immediately impressive palate contribution confirmed from the first sip. The nuttiness is the defining quality: the hazelnut and almond character that Amontillado develops uniquely through its transition from Fino — present in neither pure Fino nor pure Oloroso at this specific intensity. Sweet, fruity notes arrive alongside: rich oak, cinnamon, and nutmeg adding warm spice complexity. Baked apple carries the orchard fruit dimension from beneath the sherry influence. Bubble gum and a slightly candy-sweet quality add an unexpected accessibility. Dark cherry chocolate and peaches and cream add further fruit and dessert depth. Vanilla adds American oak warmth. The 43% ABV provides genuine presence and warmth — clearly felt as an improvement over the standard expression's 40% by enthusiasts who find the standard bottling slightly underpowered.
Finish Smooth and mellow with a lingering spiciness — confirmed across every review as the expression's most consistently satisfying quality. The Amontillado's dried fruit and nutty character carries the close alongside warm spice. Lingering cinnamon and nutmeg persist before the whole experience resolves into a clean, mellow, sherry-tinged warmth. Medium length and honest for a 12-year expression at 43%.

Best enjoyed neat, on the rocks, with a splash of water, or with club soda to expand the flavor. Neat at room temperature is the most revealing — the Amontillado's distinctive nuttiness and mulled wine character are most specific without dilution. A few drops of water opens the orange marmalade and dried fruit notes further. Over a single large ice cube works beautifully for a slower, more contemplative pour where the nuttiness and sweet spice deepen with temperature. Outstanding alongside dark chocolate, hazelnut-based desserts, dried fruit and nut boards, aged cheddar, and any occasion where a sherried Speyside single malt provides the most specifically festive and most broadly appealing whisky at the table.
