This Bourbon comes out of Hillrock’s solera of Bourbon, with a range of whiskeys from 4 to 20 years old. To make this Sauternes finished whiskey, they had to go to the bottom layer of the solera and remove 225 Liters (divided by however many barrels in that layer) and then marry them all into an Oloroso Sherry butt. After that, it was rested for a few months in a Sauternes cask before being bottled by hand, one by one, and shipped out to California.
Each bottle has a gold sticker reflecting that this is a California Private Selection, the side label indicates that it was finished in a Premier Cru Sauternes barrel (we do not know the winery). The high-toned, floral aromatics of Sauternes mixed with the savory, Christmas baking spices of their Bourbon are a match made in heaven.
Hillrock Estate Distillery is a farm distillery with roots dating back to 1806, located in New York’s Hudson Valley approximately two hours north of New York City. Hillrock is the first company to offer solera aged bourbon beginning in October 2012, though other companies have followed suit with a handful of other solera aged bourbons currently available. Hillrock was founded by Jeffrey Baker and is collaborating with Master Distiller Dave Pickerell (formerly of Maker’s Mark).
