Hillrock Estate Distillery holds a genuine industry-first distinction: America's first solera-aged bourbon, a technique borrowed directly from centuries-old Sherry, Port, Madeira, and Cognac production. Every barrel in that solera system is periodically drawn down and refilled, never fully emptied, so the older whiskey continually mingles with younger stock, gradually building depth and complexity no conventional aging method can quite replicate. This particular expression takes that already-layered solera bourbon — matured across American oak and 20-year-old Oloroso Sherry casks — and gives it one more genuinely distinctive stop: a finishing period in Barbados rum casks.
The result layers real tropical sweetness onto Hillrock's already rich, high-rye bourbon foundation. As The Barrel Tap describes it, "the Rum Finished Solera Bourbon starts off with inviting tropical coconut and vanilla bean. Next there is a rich scent of warm brown sugar and cinnamon that flirt with the high rye bourbon and sherry finished Solera base." Hi Proof's official tasting notes confirm the same layered profile: "nose: tropical coconut, vanilla bean, brown sugar, cinnamon, and toasted oak. Palate: light brown sugar, caramel, creamy vanilla, taffy, tropical fruit, and subtle floral notes. Finish: long and warming with toasted coconut, clove, brown sugar, oak, and lingering rum sweetness." Hillrock remains one of the few genuine field-to-glass whiskey producers in the world, growing its own grain on-site in New York's Hudson Valley, and claiming the distinction of being one of the first American distilleries since before Prohibition to floor-malt its own estate-grown grain. This is genuinely ambitious, richly layered bourbon — bottled uncut at nearly 60% ABV, built specifically for collectors chasing something no other American whiskey producer quite attempts.
Hillrock Solera Aged Bourbon Whiskey, Barbados Rum Cask Finish, is produced by Hillrock Estate Distillery, a farm distillery with roots dating to 1806, located in Ancram, in New York's Hudson Valley, roughly two hours north of New York City. Founded by Jeffrey Baker in collaboration with the late Master Distiller Dave Pickerell, formerly of Maker's Mark, Hillrock was the first company to offer solera-aged bourbon in America. Hillrock is one of the few genuine field-to-glass whiskey producers in the world, growing its own grain estate-side.
The whiskey is aged using the traditional solera method — commingling barrels of older and younger bourbon across American oak, then finishing in 20-year-old Oloroso Sherry casks — before undergoing a final finishing stage in carefully selected Barbados rum casks. Bottled at full strength, 59.15% ABV / 118.3 proof, 750ml.
Nose
